The black pig of Bigorre is the indigenous purebred pig, present in the central Pyrenees since time immemorial. Recognizable by his black dress and his horizontal ears, he lives freely in his native territory, Bigorre, on the borders of the Hautes-Pyrénées, Gers and Haute-Garonne, at the foot of the mountains, in a landscape of meadows and undergrowth.
Its exceptional meat is red, tender, juicy and intense. Traditional in Bigorre, the conservation of hams by drying in the open air benefits from a microclimate alternating wet and dry phases, which gives them their very particular character.
