The paddle is the upper part of the shoulder (the scapula). Its flesh is tasty and soft.

To be cooked in sauerkraut, in lentil sausage, in a hotpot...

Whatever cooking method is chosen, its temperature must be mild (160°) and its time must be long (1 hour 30 /kg). If you forget it in the oven, it will only be better!
