Le Manous is the tripoux of Lozère. It is only made up of lamb's stomachs, a minced stuffing to which are added pieces of pork ham and a few carrots, seasoned with salt, pepper and herbs, wrapped and tied with a string. The sauce is accompanied by a leg of lamb, fried onions and carrots.
