You know how much we love pie!
Imagine that: a 15 kg pâté crust made up of more than ten different meats and garnished with stuffing, sweetbreads, truffles and foie gras...
And whose paternity is attributed to Jean Anthelme Brillat-Savarin who would have imagined it in the middle of the 18th century in homage to his mother, Claudine-Aurore Récamier.
For any self-respecting pâté croute lover, there is an ultimate dish, an Everest of charcuterie, a gastronomic curiosity that you must have tasted at least once in your life: the Oreiller de la Belle Aurore.
This is therefore the holy grail of any charcutier because it combines the challenges of a choice of products from fine origins with a complex and long recipe as well as the art of a decor illustrating French classicism.
There is no "official" recipe, but we know the rules, the main one being the impressive number of different meats that must constitute it (poultry, duck, pheasant, mallard, partridge, doe, hare, pigeon, quail, rabbit, deer…). This explains why it is, in fact, feasible only during the hunting season.
