Brillat-Savarin is a triple-cream cheese, soft on the palate, which is eaten young and very fresh. It is produced in the regions of Normandy and Burgundy with raw or pasteurized cow's milk.
This dairy product contains at least 40% fat in the finished product. It belongs to the family of soft cheeses with a bloomy rind.
The color of its rind varies from white to ivory and is covered with a thick, soft and smooth white down.
