The lemon puree from Maison Ponthier, obtained by extracting the juice and expelling the fibers, stands out for the high quality of the selected Sicilian lemon. Volcanic land surrounded by mountains, Sicily presents a very fertile soil for the cultivation of citrus fruits. The island's mountains are mainly composed of tertiary land, called "Trubi" or "White Marl" land, rich in limestone, fine yellow sands and minerals. These draining soils are the ideal base for citrus groves. In addition, the mountains are very rich in small torrents which regularly feed the soil.
The permanent natural exposure to the island's sun, essential for the good development of citrus fruits, also contributes to the high quality of Sicilian fruits.
