These West Indian sausages to be baked, grilled, pan-fried or microwaved, are packaged in strings. Thus, it is possible to prepare only the necessary quantity. Very spicy, West Indian black pudding is prepared from pork blood with breadcrumbs and semi-skimmed milk. It is generally served with mashed potatoes, pan-fried vegetables or rice, sometimes garnished with pineapple or other exotic fruits.
