Fenugreek is a plant with a powerful, slightly bitter and astringent flavor, which can be reminiscent of celery. It must be dosed carefully. Its very hard seeds must be roasted, crushed, cooked or soaked before being used.

Very present in Indian cuisine and in the cuisines of the Middle East, Fenugreek seeds go very well with lentils and enhance the taste of vegetable dishes as well as stews.
