Valençay is one of the rare goat cheeses associated with a historical anecdote. Talleyrand owned a castle at Valençay, in Indre. He had asked his farmers to make a cheese in honor of Napoleon I on his return from the Egyptian campaign. He was offered a goat's cheese in the shape of a pyramid.
But, in the meantime, Talleyrand would have become angry with Napoleon and, out of spite, he would have decided to symbolically cut off his head by removing the top of the pyramid.
Valençay owes its ashy rind to a spray of charcoal powder during its production.
It is eaten dry, but never very dry, as it then loses its qualities.
