The tripoux d'Auvergne, known as the "recipe of Saint-Flour" is composed of a farce containing a slice of veal seasoned with garlic, onions, parsley and other spices and an envelope in lamb's pansette. The whole thing is rolled and tied.
This preparation simmers for more than 6 hours in a fine sauce worked with white wine and tomato.
Traditionally, the tripoux is accompanied by steamed potatoes.
It can also be served with dry vegetables: blonde lentils, blond peas or truffle.
